Ricotta with honey, cinnamon and berries

As we are not huge dessert people, I am always looking for dessert recipes that are not too sweet and can be whipped up in a couple of minutes.  This recipe for Ricotta with Honey, Cinnamon and Berries was perfect for Greek date night.

Ricotta with Honey, Cinnamon and Berries

I found this recipe on the  Epicurious website and adapted it slightly.  You can find the original recipe here.

Ingredients

2 cups ricotta cheese
3 tbsp honey
3/4 tsp vanilla extract
pinch cinnamon
2 cups mixed berries
1 tbsp lemon juice
1 tbsp sugar

Method

Blend the ricotta cheese, honey, cinnamon and vanilla extract  together in a food processor or immersion blender.

This can be made a day ahead.  Refrigerate and stir before using.

Combine the berries, lemon juice and sugar.  Let stand at room temperature for at least 30 minutes.

Mold in a ramekin or serve in a wine glass.

Top with berries and serve.

I’ve adapted this recipe to make it less sweet.  Taste as you go along and add more honey / sugar if you want it sweeter.

In the original recipe cream cheese is added to make a smoother dessert as the ricotta can be quite grainy on its own.  I did not have cream cheese so left it out and it was fine.  A little bit of yoghurt should also be a nice addition to the ricotta mixture.

This was the perfect dessert after Greek meatball soup (starter)  and Lamb Kleftiko (main course) for our Greek date night.
