Jamie Oliver’s Blooming Brilliant Brownies

These Bloomin’ Brilliant Brownies, inspired by Jamie Oliver, are a decadent treat that perfectly balance rich, dark chocolate with the natural sweetness of figs and the crunch of mixed nuts. With a gooey centre and a slightly crisp exterior, these brownies are sure to impress. They’re easy to make and serve beautifully with a dollop of crème fraîche or yoghurt mixed with a touch of orange zest for a zesty twist. Perfect for a special occasion or simply indulging at home!

Ingredients

  • 200g good-quality dark chocolate
  • 250g unsalted butter
  • 2 fresh, ripe figs, thinly sliced
  • 50g mixed nuts, chopped
  • 80g cocoa powder
  • 65g plain flour
  • 1 tsp baking powder
  • 360g caster sugar
  • 4 large eggs

Method

Preheat the oven to 180°C (350°F).

Line a baking tin with greaseproof paper.

Break the chocolate into pieces and place it in a large heatproof bowl with the butter. Set the bowl over a pan of simmering water, stirring occasionally until fully melted and combined.

In a separate bowl, sift together the cocoa powder, flour, baking powder, and caster sugar.

Once the chocolate and butter mixture has melted, remove from heat and stir in the dry ingredients until fully combined.

Beat the eggs in a separate bowl, then gradually mix them into the chocolate mixture, stirring continuously until smooth.

Pour the brownie batter into the prepared tin, spreading it evenly.

Top with sliced figs and a sprinkle of chopped nuts.

Bake for around 25 minutes, or until the brownies are slightly springy on the outside but still gooey in the middle.

Once baked, allow the brownies to cool in the tin. Then cut them into chunky squares.

Serve with crème fraîche or yoghurt mixed with a bit of orange zest on the side for a fresh, tangy contrast.
