Kalakukko, a traditional Finnish dish from the region of Savonia, is a loaf of bread baked with a filling of bacon and vendace, a small-boned lake fish, creating a delightful combination of flavours.

One Chicken, One Cacciatore Coming Up!

The word cacciatore is the Italian word for hunter. Chicken cacciatore got its name from the rustic, “hunter-style” way this dish is prepared. Numerous versions exists all over Italy, from the southern region using red wine as opposed to the northern region which tend to use white wine instead. To compliment the rustic nature of this dish, we served it with sourdough bread with molasses and sunflower seeds.

My Favourite Low Carb Bread

For most people following a low carb diet bread is usually the most difficult food to give up. After all it is delicious and super convenient.

Since we started eating a bit more low carb a couple of years ago I’ve tried countless low carb bread recipes.  Almond flour is too expensive and I don’t like the taste of coconut flour in a savoury bread.  Grinding up linseeds and sunflower seeds became my preferred low carb “flour”.
